Dave uses a loin back rib. The difference between a St. Louis cut spare rib and a loin back, is that the bone structure has a membrane on it that is a lot tougher. Dave uses his world famous Famous Dave Georgia Mustard sauce which gives a really nice base for flavoring the meat.
Next, Dave uses brown sugar, and really rubs it into the rack. Now, Dave uses his award winning Rib Rub whereas he applies a generous amount to season the ribs properly. For 2 hours, the ribs are allowed to marinate in the rub, the sauces, and brown sugar to really do its job. The ribs then go into the smoker for about 4 hours.
